I had to restore my database to 10 days ago, I had an order Processing, but it is now gone from the list... Any way to get this back? Or remake it and put it in the customer's account, she has order from me before.

Did you backup the old DB before you restored?
If so just add the order i phpmyadmin.

A restore of the database WIPES OUT any and all existing data.
So, yes, whatever happened in the database AFTER your backup is now lost since you DELETED it all by replacing it with your backup.
If you need the order in the database, it's best to place the order by logging in as the customer and entering it as they did.
(Manually attempting to force order (or any other) data into the database is dangerous unless you've studied all the related database tables and fully comprehend what you're doing there and why.)

Okay so if I download master password and login as the customer, but what do I do about the payment method, if they used a credit card?
Temporarily turn on your check or money order (if not already) and place the order using check... Then note the transaction with the trans ID and a short note describing the issue for the customer.
