Rename Page Title & Kill logo.gif

Both of these seem like they should be simple, but I'm going buggy looking at tutorials and forum posts for hours.

Please tell me how -- 1. I can change the name of the main page. When I open the site in Firefox using tabs so I can have several pages open at once, the tab says "Zen Cart, the art..." How can I either kill or change that.
2. I've managed to find and kill the logo.gif file but I don't know where to find the code that calls it up so I'm getting a broken image symbol on the page.
