Is there a way to make it so the copyright dates say 2008 - 2009 on my shop page just to indicated when I started my website.

in your custom english.php, modify the define for FOOTER_TEXT_BODY so that
becomesCode:'Copyright © ' . date('Y') . 'Code:'Copyright © 2008 - ' . date('Y') . 'Neville
