attribute options for certain items, but not others?

The + or Blank Prefix on the Attribute is for ADD ...

The - Prefix on the Attribute is for SUBTRACT ...

You do this on a per Attribute basis ...

Setting the Attribute Prefix Default, as tony_sar suggested, helps with "future" Attributes ... not with ones already added ...

If you want ALL Attributes to have BLANK Prefixes on those already added you could run an update on the products_attributes table to remove all the existing ones, if there are too many to edit ...

Backup your database before running this command:

UPDATE products_attributes SET price_prefix = '';
