Same attributes to all my products?

Hi

My website contains different types of rings, engagement, wedding, etc
The attribute I wish to create is one for ring sizes.
Is it possible to apply the same attributes to all my products (rings) in one go, or do I have to apply that attribute one product (ring) at a time?

Not al in one go but...
Set it up for one and you can copy to a category

Hmmmm not quite sure what you mean, “Set it up for one and you can copy to a category” my understanding of what you are saying is this, I setup a attribute called Ring Size with a text box so customers can enter their ring size, I then have a category on my website called wedding rings with 10 rings under that category, are you saying I can apply that attribute to all 10 rings under the category wedding rings in one go, or do I still have to apply the attribute I created one ring at a time?

Correct...
admin > catalog > attributes controller > select the product with the attribute you want to copy > select the attribute > select from the menu towards the top >
copy to category > etc

I have about 100 categories, can I copy to every product on the website? The "Copy to Category" causes repetitive strain injury on my wrist and takes a long time!!! I did this before but don't want to do it again.
