Is it possible to have more than one text attribute?
If so, how?

As long as your attributes have different Option NAMES, you can create as many TEXT attributes as you please.
Just create an option NAME first, then from the dropdown, select whatever TYPE is appropriate (in your case, TEXT).
Later on, you add Option VALUES to each Option NAME - but that's another issue...
