Desperately need help assigning attributes

Hi, I've been going to the threads and reading every tutorial out there, but I can't find an answer to this one.

I want my products to have 2 attributes: color & length. This worked fine and people can now use the product filter to search for products with the color and/or length of their preference.
However, on every product page it says 'Please choose' and then the length of the product. Since every product only comes in one length, I would like to remove this. Some products do come in more than one color, so I still want people to be able to choose a color, but only when there are multiple colors.

To sum it up:
1) How can I assign the length attribute without it showing up on the product page?
2) How can I remove "please choose" when there is only one color. Other products do come in multiple colors so I don't want to just delete it completely.

If there is one length then there is no need for an attribute
Just create the product as "5 inch product" and do not add any length attribute to it.

Same as above - if only one color no need for adding any attribute to that product...

Thanks for replying, but I'm afraid I haven't been clear enough. I actually do need the attributes for every item. I want customers to be able to use the search filter to look for all items in their color of choice. Same goes for the lenght.
