Bold Lettering across the top of Define pages

I can not figure out a way to change the bold lettering on the top of a Define page to something else. Example Say I change the shipping and Receiving page to something else, no matter what I have changed it still says shipping and receiving on the top. Same goes for Page 2-7(I have a mod giving me a few extra pages in more information).

The following changes are needed.... and you cannot change the url without changing the filenames... which is easiet accomplished with the define pages generator in the contrib index.
