Hi, rather than having all the categories one right after each other, is it possible to do something like what I have on this site, without too much "messing with it", thanks!

Sure, Just create a blank category without no name but give it a sort order a number right after the one where you want a blank space.

You can use Categories Dressing to add headings and spaces wherever you want them, without having dummy categories cluttering up the system.
