I was having the same problem with my hosting company. Running SQL 5 They told me that the timeout limit was set to 60 seconds and that was causing the 500 error as well as my SQL limits were maxing out as I did the uploads. My work around was to reinstall zencart and easy populate. After that just upload 1000 records per hour tx sizes of 300 but i start doing 2 500 txt files each hour today. So far it is working for me. Not sure if you getting same error for same reason but i did find this to work for me.

Did anyone ever find a solution to the 500 errors....I am haveing them as well when I try to access product details, attributes, categories in store or admin.
