how can i send a VAT reciept or how can i add my VAT information to the order conformation emails??

ive added my VAT number into the email_template_checkout.html in the emails folder but this is not adding it to emails when people select text only emails. where do i change the text emails??

also noticed that the invoice button has a price (inc) ad this price has not got the vat incuded.... why
