Out of the box, there are order statuses of: Processing, Delivered, Updated, for example. Is it possible to add extra status indicators?

Examples I can think of are:
Submitted to Warehouse (or Order Fulfillment)
Shipped
Back Order
etc...

Or is this somehow locked in to the existing workflow? Thanks all!
