using demo files in cart

I used the demo items when I installed my cart. when I want to put real products in the cart what do I do to get ride of the demo products?

Just delete the demo categories through admin.

If you intend selling Gift Certificates, keep that category, and the example certs inside it. GC's are more detailed to set up, so keeping the examples can be helpful later.

Just disable the category until you need it.
