Default Configuring Stock Settings for specific categories

I'm creating a jewelry site that has 2 main categories, "Ready to Wear" and "Design Your Own." All of the products in the "Design Your Own" category should never run out of stock. I'm assuming the best way to do this is to set "Subtract Stock" to FALSE and the "Quantity" to 1. Is this correct?

That being said, on the "Ready to Wear" category, there will be products that will have a limited quantity and will be able to sell out.

Is there a way to set different stock settings for 2 different categories (FYI, it would need to be changed on the two top-level categories)?

    No admin setting for this
Most with your issue set stock to be tracked and for your "Design Your Own" - set the product stock to say 1000000 as this should take you to well into retirement
