Hello!
I was wondering if it were at all possible to hide the "New Products" and "All Products" pages at all? And if so where do I go to disable them?

Configuration >> Index Listing = Set all new and all setting to zero
Then
Configuration >> Layout Settings >> Categories Box - Show Products All Link & Categories Box - Show Products New Link set to false.
