very new to this, i listed my first product and leant how to add a drop down menu with sizes etc,

but next to the option "size" it has a random 'small' there that im not sure whats its doing there! or how to remove it, its just the word...

i only have a limited amount of this product how would i list the product with only 3 in a size small, 1 in a size large etc... so that no one can buy more than what ive got,
