1. admin -> configuration -> ex pages settings -> EZ-Pages Display Status - HeaderBar (turn it off)

2. This will depend on the number of categories your have.

They go off the end of the page. I have used the demo products. This is on the local computer so I can't give you a look yet?

check your stylesheet.css for the following:

#navMain ul li a, #navSupp ul li a, #navCatTabs ul li a {
text-decoration: none;
padding: 0em 0.5em;
margin: 0;
color: #ffffff;
white-space: nowrap;
}
