Removing categories from header w/o turning off header.

Using Zen Cart 1.3.8 with "Mother Nature" template.

I've tried searching but can't seem to find anything to answer my particular question. I want to remove the categories from my header but NOT the whole tab. The orange bar completes the layout and look of the header and when turned off, it just looks flat and cut off. Is there a way for me to remove the category links without actually turning off the tab in the Admin area?

I have one other question since I want to remove the categories links from header w/o turning off header is there anyway I could just add plain text in the header I don't want links?
