hello all,
I keep getting a message whenever I log into admin.
It asks me to clean the admin log as it is over 2 months old.
Can someone please tell me how to do this, where do I find it, what do I need to do, etc?

As the admin_activity_log table gets bigger or gets older in what it holds, it should be cleaned out periodically ...
To do this, you can use the Tools ... Store Manager ... and you will see an option in red, for updating the table and removing the records from it ...

The Admin Activity Log is a tracking method that records activity in the Admin. Due to its nature it can become very large, very fast and does need to be cleaned out from time to time.
Warnings are given at 50,000 records or 60 days, which ever happens first.

Another question now, where is the database located, so that I can back it up.
Is this the one that I see in Cpanel, or is there one in the Admin on Zencart also?

You would do that in your CPanel using phpMyAdmin
