Zen-cart is already loaded on my test site. I need to make changes to the original Store information that was filled in on Install.
Question: What file would I find that info in and can I make changes via mySQL database/file manager?

It depends on exactly what you want to change, but a lot of stuff can be edited in Admin. www.yoursite.com/admin if the admin folder name hasn't been changed.
A little more information about what you want to do would help.

I need to change owner name, postal code and street address. I inadvertently put in my home residence info and my name instead of actual store owners name.

I don't have a my store file or folder. I haven't changed the admin names yet. What I'm actually looking for is the form you fill out when you first start the new installation of the Zen Cart Application.

In your Zen Cart admin, you should have a Configuration tab. Under Configuration, look for "my store". The info you want will be listed under that. It's not a folder or file.

I don't have a file or folder in configuration named my store. This thing has taken up enough of my time and everyone else who helped. I want to do a re-install, what steps should I follow? Is there a step by step zen-cart document o this procedure?

Yes I can. But don't seem to be able to find, what I would call the company profile document.
