If you set a date for the upcoming Product on the Date Available and set the quantity as 0 then it will display but not be able to Add to Cart if you have configured your Stock to display Sold Out and track stock ...
You can also setup that Products are still left displayed but are marked as Sold Out when they are purchased and stock is reduced to <= 0 ...Linda McGrath
