how do i modify customer order

lets say customer order 30 Qty and i don't have 30 i only have 15

how do i edit that n same way how do i add produtc to customer order from the admin

i want to make all the page colum not rows

i install this plugin called column_layout_grid_v_1_3_8

it works only for the catagory, and special

but i still need to make this page all products,future products,new products to coloum not rows


how do i change rows to colum for those page pls help..
