Yesterday everything was good with the world (so to speak) and now the descriptions that I am adding today for my products (Cone burners, stick burners, log burners) are being "cut off" at some point. I have tried in admin to extend the length of the description and in maximum values but even though it says the proper amount of allowed text it isnt showing!

Might be the text itself - are there any special characters (other than a-z, 0-9, and - and _ ) in that description ?

yes thank you so much. That seems to be the problem. Is there any way I could include other characters such as copyright circle, quotations etc......?
