2 shipping methods per item

Is there a way to assign shipping methods by item. For example, some products can only go UPS and others can only go via USPS.

Is it possible to exclude the shipping methods that don't apply for that item.

Also, on some products, the shipping method is dictated by the weight.

You would have to setup a field in the products table to manage which shipping:
0 USPS or UPS
1 USPS Only
2 UPS Only

Then, you would need to test the order in each of the shipping modules to control which one(s) are enabled or not enabled ...

Next, you have to decide what to do when you have a mixed cart where Products can only ship via UPS and Products that can only ship via USPS ...
