How do you set the default category to display on the main page?

This sounds like such an easy question. You would think it is but I cant find how to do it anywhere.

I have searched the FAQ and cant find a similar question.

I have about 5 categories and I just want to choose which category of products gets displayed as default when you visit the main shop page.

Please help this is driving me a bit mad.
