Page 2 Change Title Help

Hey guys I was wondering how I would change where it says page 2 in the meta tags title and the actual title on the page. I figured how to change the link in the information bar to change page 2 or whatever to what I wanted it to be but when you click the page, page 2 or whatever page still shows up at the page and you cannot change it in the define_page2.php in the admin menu. Also how do I change it in the meta tags Where at the top of the browser it would say: Page 2: Zen Cart, The Art of E-Commerce or whatever.

But in the image I see the person actually changed it from Page 2 to whatever he wanted.
