Separate Shipping Methods for Different Categories

Google 'ceon advanced shipping'. I think that mod will do what you want, though I haven't used it.

I had actually come across the ceon mod in my searches, but it really is an advanced mod, and I was hoping for something a little simpler.

A couple of threads here simply add some coding to the built-in shipping modules:
