mixing templates

Sorry if this has been asked before but I couldn't find it sadly.

I have two templates that I like, is there any way to use the header & navagation part of the "Apple Zen" Template and keep the sidebar design of the "Holiday" template?

Certainly. You would create your own custom template incorporating those aspects of the templates you like. There's information about creating custom themes in the Tutorials/FAQ section.
