Admin timezone

My admin time is currently displaying as Fri, 27 Aug 2010 07:27:09 +0000GMT

the actual time is 8.27 so its an hour out

server is in GMT zone

is it worth installing time zone mod?

what significance has this time displayed on zen functions?

None - - It is mainly for you to track order time

I have noticed a couple of times where admin time is fluctuating a lot,12 hours out of sync sometimes-so the date is often wrong as well

IST is GMT+1, so both are telling you the same thing.

Zen Cart is simply showing you what PHP is telling you based on the server's configuration. If you don't like the PHP configuration, sort it out with your hosting company.
