is it possible with zen cart to have my home page display no products, but instead just be a page filled with content and just a link to the store? if so, can someone point me in the right direction to do this?

Make a copy for your template of tpl_main_page.php
Open and read all the commented entries
You can enable ones that will drop columns and make it for "this is home page"

I want to put a link to an online store in the header along with other links that go to 'non store' pages (contact us, general information, about, etc)...should i use ez pages or customize tpl_main_page to do this?

would it be better to just make a custom home page and have a link to the store in it?

These pages are part of ZenCart
There are 3rd party modules for navigation in the header available in the free software downloads section
