Not without significant custom coding.If a person adds a product to cart, can I make the item disappear from the site?
Zen Cart presently handles display based on product status and product inventory on hand, not based on what might be in some random shopping cart somewhere that might get abandoned and not actually complete checkout.

Check your settings in the Configuration ... Stock ...If a person adds a product to cart then checks out, can I make the item disappear so it doesn't show up on the site?
There are settings for when the Quantity drops to <= 0 to set the Product Status to Out of Stock ...
Or, you can set it so that when Stock is <= 0, the Add/Buy buttons change to Sold Out images ... and can no longer be purchased until there is a quantity > 0 ...

Your title words when the Product is marked out of stock as when it gets added to the Cart ...
However, your question words it based on the settings in the Configuration ... Stock ...

I was thinking admin>configuration>stock>Products status in Catalog when out of stock should be set to
Code:Show Products when out of stock 0= set product status to OFF 1= leave product status ON
