When I set up the Cart I input our logo details wgich now prints on the top of each Invoice / Despatch Note. Cant remember what this is called and where it is stored.

Dont think you can change it in the Admin Panel.

I think the overall website header/banner is called logo.gif but what is the small image called that prints on Despatch Notes / Invoices as we wish to change it.
