Security Question

I have a developer needing access to my Zen Cart admin to make changes. Would they be able to do anything malicious with the information available? I am especially concerned about my payment module (PayPal) information. I plan to change the password when they are complete.

Just to be sure, I'd make a backup of my current ZC files and database before allowing the developer access ...

I'd do the same, and if the developer doesn't need access to eveything, I'd consider installing the Admin Profiles mod, and I would remove, and delete the configuration settings from, any payment modules you have installed.
