Everytime I change the settings on configure.php and save it, it goes back to the old settings?

Both config files probably have permissions of 444 and need to be changed to 644. You can do this within your Hosting Control Panel; look for File Mgr. or something similar. After editting make sure to change permissions back.

Images not being found means they are not where Zen Cart thinks they are or they were not uploaded. When you moved the zen cart files did you also move your images?
