When you create the title for an ez-page, is that stored in a file or in the database?

I was doing some validation on my home page, and the ampersand symbol from a title of an ez-page in the footer was not validating. I fixed it by using the regular old ez-page editor in Admin Tools to change the ampersand to ampersand code, but, interestingly, if you go back in to the editor, it still shows as a normal ampersand, not as ampersand code, which is totally fine because the ampersand code that I entered, via the ez-page editor, got stored either in a file or the database, and simply then renders as a normal ampersand in the ez-page editor title field.

Anyway, I just got to wondering, where the actual storage is -- a file or the database? I looked everywhere for a file that held the ez-page title and could not find one.
