Can the categories page and product listing pages etc be added to define pages editor and modified in the same way?
I just finished overhauling the main page and rebuilt with my own html and css, can this be done with those types of pages?

No. Those pages are changed by editing the template files and the built-in CSS stylesheets.
Which php file and css controls those particular pages? would I be able to get the desired php code that displays the categories from them and add them to an ez page and link to that instead?
You have to jump through some hoops to get PHP to work on EZ pages, since that content is stored in the database.
Those pages are controlled by many separate PHP files. Their appearance is mostly determined by their respective template files, e.g. tpl_product_info_display.php. All the CSS is in stylesheet.css file in the active template's css folder.
You can't think of a dynamic program like Zencart the way you approach flat HTML sites. Zencart pages are built on the fly from many files and database tables.
Maybe if you explained in more detail what you're trying to accompish, we might have better advice.
I am basically trying to build and style the page the same way i did my main page.
Previously I used those php files to attempt styling etc, but could not for the life of me add my own headings etc and change layout of the page.
This resulted in a poorly designed page that had no similarities to the home page.
As for the product info pages, search the Free Software Add Ons (link above) for product info display and look at the several mods by Clyde Jones. You can see from the file(s) he edited and the edits he made (by comparing his file to a stock version) how the display is changed.
The product listing (I think that's what you mean by category pages) is mostly changed by changing the CSS in the stylesheet, and by installing the Layout Grid mod if you want multiple columns.

Where can we find the Layout Grid mod? I'd like to install it to display my categories in a grid.
I already have the Column Grid for Products.
Take a look at the "Three Columns Grid for New and All Products Pages" mod and see if that is closer to what you are looking for.
