Change Error Messages

Hi,

I'm currently using ver 1.3.9h and template forest path.

I have an attribute within a product (size-colour) with option values of E/Oak S - XXXL & H/Green S - XXXL.

Currently I have two of the options set to display only as they are not available in stock so I would like to replace the Error message that a customer gets 'Please correct the following:
On the Option for: Size - Colour You picked an Invalid Selection: E/Oak Large' to, 'Sorry the item which you have selected is currently out of stock'

I would also be grateful if anybody can tell me how to switch off the message 'This product was added to our catalog on Thursday January 01, 1970.'
