Can anyone tell me which file i need to edit to change/delete text on the bar on the products page

Are you talking about "product image"?

You'll find it in includes/languages/english/YOUR_TEMPLATE/index.php around line 32 (where YOUR_TEMPLATE is the name of your custom template).

The easy way to find where text is coming from is by using admin>tools>Developers Tool Kit. Type the text into the box at the very bottom of the page (scroll down) and select "all files - catalog/admin" from the pull down menu. Then click the search button on the far right. You'll get a list of the places the phrase is found.
