Update template <rookie>

I have a store http://fieldandstreamsports.com/fssstore/ i would like to install new template. I have successfully install new templates on some sites i have played with but none that hold a database. What do i need to do to install a new template and ensure all runs smooth with my data base and products. Do the categories line up, and stuff like that?

Its a simple process and rarely involves touching the database
