Is it really true with the template rumor? That if you use the original template and there is an upgrade, your store goes kaput?

Sort of.
Your *store* would be just fine, but your template appearance would revert back to the original Classic green look. Some of your mods might no longer function, or the site might break in some way, if they had to edit core (non-overrideable) files, or if the base files for mods had been updated in a way that was incompatible with the older mod versions of those files.
