I would concentrate on installing IH3 on your Zen Cart. As I remember the instructions are pretty straight forward and it's easy to install. You can deal with the images later. Resizing isn't that difficult. Most good image editors will do it for you.
@afo - you may want to look at updating the javascript for your ih2 as you are using the very original version, where the js is buggy or has issues in in opera, chrome, safari and IE9, updating the js imagehover file should fix that
@LilBeesImages - Image handler will automatically create all three sizes of images (thumbnail, medium and large), you just add your product and add the product image as normal and image handler does the rest.
optimising and resizing the image before it goes up is a good idea but not essential in most cases if using image handler, its a good idea because it cuts your server space usage and ocasionally if the image is large (over 900kb) the scripts will time out.
