Help with Attributes

This is an attributes situation I just can’t figure out. I’m sure some of you totally Zened guys have a very simple answer for this so I would appreciate any and all suggestions.
This is the scenario;
I sell widgets. I have a number 7 widget that comes in three colors (red, blue, green) and three sizes (large, medium and small. I list them with an attributes box for both color and size to be chosen.
I’m a small vendor, so I only carry 1 of each widget in stock. Joe Customer orders the number 7 widget and chooses small for the size and red for the color. I ship to him. I no longer have a small, red number 7 widget in stock.
How do I disable this in my attributes controller? If I disable RED, then the medium and the larger no longer show. If I disable the SMALL, then the blue and the green no longer show. This is quite perplexing to me. Hope you can help.

Well....I installed this add-on but it didn't change a thing. I followed Kuroi's instructions, but nothing. Any ideas?

I just hit delete for the color I do not want there any longer and it deletes it but leaves everything else there. take a look at my website laboutiquedelingerie.com you may have to go into option values like we did and add each size, than add each color. so you will have the drop down boxes for the customer to pick size and color.
