How do I add product attributes to existing products?

My previous web developer left our company and now we need to make changes to a client's database, I'm not sure on the best way to do it. What I need is to add product attributes such origin, maker, condition, year of manufacture etc. Currently we are using the product text option, so we need to type out all the time. What is the right way taking into account that the databse already as 300 items.

The website is www.theoldcorkscrew.co.za choose an item to view how its currently displayed. The above attributes will need to be shown at all time when adding new products.
