Adding custom field to Order Confirmation Email

Pickiing up on the thread I started, here. Do you think I'd be able to work through the modifications you've made here to add the customers date of birth to order confirmation emails?

If so then what do I add to the array instead of your 'stylist' => $order->fields['stylist'] ?

So let's expand this a little further. I have a new customer field (alternative email address) that needs to be added into the order confirmation email - not for sending the email but just as an fyi to the fulfillment company.

In function cart - there's a query for $customer_address_query which pulls from the customers table. Can I use that query to add in my new field and then just add it to the array for order create? Then add it to the html message? That's what it looks like will work so have I missed anything?
