I don't really like fly-outs with multiple levels - you have to think about people using phones now, and it just makes things difficult to navigate. One level is fine though.

I agree. One flyout level is fine - any more than that, it gets confusing and messy on the small screens. You can have multiple levels, though. The stock mod supports six.
Another thing many people forget about with flyout with a phone, is because they are 'touch to activate' the flyout, instead of hover over with a computer, is they have the root of the menu as a working link so on a phone it takes you straight to a page before you can look down the menu and select the actual option you wanted. The root of the menu needs to be a dead link and go nowhere, and only navigate from the options in the menu.
If you want the features that Categories Dressing can provide, that can easily be turned into a flyout menu by adding a few CSS rules given in its support thread (post 1750).
I can't think of one offhand. There may be an example posted in the support thread somewhere... It works like any other CSS flyout, aside from individual styling details.

I can't help but notice that you also use those little triangle pieces in your menu. Is that something that's standard with the mod?
