Can I able to build up my products and change templates and boxes while on Maintenance Mode?

Yes...
If you want to see your store front while in maintenance mode, add your IP address to the maintenance mode configuration.
This will let YOU see the store front, but hides it from everyone else.
Most SHIPPING and PAYMENT modules cannot be tested while in maintenance mode.20 years a Zencart User
