    Default Model to SKU

    Hi.

I'm interested in doing this[1] but since many of the edits are under the /admin won't I loose those edits when I update. Or does the overrides apply to that as well?

There are no overrides in the admin, so you would need to reapply the changes when you upgrade. This is a normal part of the Zen Cart upgrade process and is done during the file merge step.

Are contradictory in my mind...To be clear, you're saying that when I upgrade there is a process that is part of the upgrade scripts/install whereby I will be presented with something to merge the differences?

Not automatically - you will need to merge custom changes using a tool such as WinMerge.
