It may not be obvious, but the order status is just an item displayed to the Admin, saved in the Database and (if desired) emailed to the customer when the Admin edits an order.
Setting the status to any value does not actually modify the order or delete it or whatever, it is just a tag associated with it for reference.
Thus you can add any other statuses you like if they will help you process and find orders easier.
