Is it possible to display a product's selected attributes on the PayPal page and on the PayPal receipt received by me and by the shopper?

If you're using the latest version of Zen Cart and if your product name is short enough, then the attributes will indeed be added as long as they don't go over PayPal's allowed maximum number of characters. This applies only to Express Checkout.
More importantly, your store's receipt is the master copy of the official order information, so that should be considered the authority which people rely upon..
