When my customers get the email they have a zen cart logo at the top and this "Copyright (c) 2012 Zen Cart. Powered by Zen Cart" at the bottom. Where do I edit these?

Logo in /email/header.jpg
And other email text is contained in the language files.
Use the Developers Toolkit to find the text needed and the corresponding files to edit. Or use your own editor's search tools to look in the language files on a copy of your site which you keep on your PC..
